Our Story

A STORY OF EAST MEETS WEST

HACHI RAMEN is a fast casual concept restaurant, which blends rich California cooking philosophy with Japanese technique and ingredients. Executive chef Misako Ohba, along with the collaboration of Azuki Sushi co-owner chef Nao Ichimura, creates a new variation on Japanese ramen with a West Coast style, as well as a selection of market fresh salads, unique bowls, sushi, and snacks. With a take-out and dine-in option, this San Diego Banker’s Hill hotspot offers the convenience to order ahead, order for office deliveries for the next big meeting, or the perfect spot for happy hour.

ABOUT OUR RAMEN

Following the philosophy that Japanese food is to be “eaten with your eyes first,” our ramen is created so that you can enjoy the dish as soon as the bowl is placed on the table. From local farms, we source organic vegetables that are in season, to preserve the flavors of the ingredients at their peak. Also, we worked with noodle manufacturer Sun Noodle to perfect the thickness and texture of the noodles to maintain its balance with our rich yet deeply savory broth.

We are Temporarily Closed due to The COVID-19

Unfortunately, COVID-19 strikes directly at who we are as a business.  We are not just about food or a meal, but instead a food experience that is shared with others in the communal table or at the counter, with staff and customers together in close proximity.  It is an interactive community experience built on food. You may not talk with the folks in the next table or adjacent at the counter but you can feel their energy and they are part of your experience.

In normal times everything about this is good.  However, with the current health conditions not so much. It is for this reason we have decided to temporarily close Hachi Ramen to eliminate all contact that could potentially contribute to the spread of this virus. We feel our responsibility to protect our staff, customers and those we love as best we can outweighs any other consideration.

Stay healthy and we will keep you updated as the landscape changes. We look forward to sharing a food experience with you at Hachi again sometime soon!
